Whoopie Pies
Ingredients:
¾ c boiling water
¾ c cocoa powder
4 c all purpose flour
1 ½ tsp of baking powder
¼ tsp baking soda
½ tsp salt
2 c sugar
½ c shortening or 1 stick butter
1 large egg
2 large egg yolks
2/3c buttermilk
Preheat oven 350 F. Grease and flour whoopie pie pans or baking sheets.
In a small bowl, mix boiling water and cocoa until smooth, set aside to cool. Sift dry ingredients in bowl and set aside. Using a stand mixer (paddle attachment), cream shortening and sugar, add eggs one at a time. Be sure to scrape sides of the bowl. Alternate adding the flour mixture, buttermilk and chocolate. Be sure to scrape sides of the bowl. Repeat until all is incorporated. If you dont have a whoopie pie pan, measure ¼ c for each and drop on your baking sheets. Leave at least 2 inches between each cake. Use cookie scoops for consistency.
Bake for 10-12 minutes and springy to touch. Completely cool on wire rack. Spread your favorite buttercream frosting on flat side and sandwich together. I use my Marshmallow Fluff Filling. Enjoy!
